Mocha Buttercream Icing
Ingredients
- 5 cups powder sugar – measured & sifted 625 grams
- 2 cups unsalted butter – slightly chilled 452 grams
- 1 Tbsp. vanilla extract
- 1 Tbsp. espresso powder heaping
- 10 oz. semi-sweet chocolate chips
- 1/3 cup heavy whipping cream
- 1 pinch salt
Instructions
- Melt chocolates over double boiler until smooth. Crush coffee into fine powder and stir into melted chocolate. Set aside to cool slightly.
- Cream butter and vanilla.
- Add cooled chocolate and mix until combined.
- Slowly add powder sugar until well blended. Add whipping cream as needed.
- Using a spatula, stir frosting by hand to remove any air bubbles from the mixer.
