Ingredients

  • 1 medium Russett Potato
  • 1 tsp. olive oil
  • ½ tsp. table salt
  • 2 tsp. butter
  • 1 pinch freshly ground black pepper
  • ¼ cup shredded cheddar cheese
  • 1 heaping tablespoon sour cream
  • 1 tsp. fresh chives chopped
  • 1 slice bacon cooked and chopped

Instructions

  • Preheat oven to 300 degrees. Scrub potato and pierce skin several times with a fork. Rub the skin with olive oil and season with salt.
  • Place the potato on a rimmed lined baking sheet and bake until tender and golden brown, about 90 minutes. Slice the potato down the center, and using two kitchen towels, squeeze both ends towards each other forcing the potato to open. Add butter, a pinch of salt, black pepper, cheddar cheese and bacon bits. Top with a dollop of sour cream and finish off with a sprinkle of freshly chopped chives.
