Mocha Buttercream Icing

Ingredients

  • 5 cups powder sugar - measured & sifted 625 grams
  • 2 cups unsalted butter - slightly chilled 452 grams
  • 1 Tbsp. vanilla extract
  • 1 Tbsp. espresso powder heaping
  • 10 oz. semi-sweet chocolate chips
  • 1/3 cup heavy whipping cream
  • 1 pinch salt

Instructions

  • Melt chocolates over double boiler until smooth. Crush coffee into fine powder and stir into melted chocolate. Set aside to cool slightly.
  • Cream butter and vanilla.
  • Add cooled chocolate and mix until combined.
  • Slowly add powder sugar until well blended. Add whipping cream as needed.
  • Using a spatula, stir frosting by hand to remove any air bubbles from the mixer.
