Our Dressed Up Chunky Guacamole features freshly mashed avocado, elevated with the addition of roasted sweet corn, cotija cheese, finely chopped jalapeno and onion, a squeeze of fresh lime juice, and a sprinkle of cilantro and salt, creating a vibrant and flavorful dip that's perfect for any occasion.

Ingredients
  

  • 2 ripe avocados halved, pitted and slightly mashed
  • 3 Tbsp. red onion finely chopped
  • 1 chile serrano or jalapeño (more or less to taste) minced fine
  • 2 Tbsp. cilantro leaves roughly chopped
  • 3 Tbsp. freshly squeezed lime juice
  • 1 tsp. salt (more or less to taste)
  • 2 Tbsp. cotija cheese
  • 1 ear of corn (preferably grilled) kernels cut off of cobb
  • 1 roma tomato seeded and diced

Instructions
 

  • In a medium sized serving bowl, mash the avocado with the lime juice and salt. On top, add the tomato, jalapeno, red onion, corn, cotija cheese, and cilantro. Serve and enjoy!
