Ingredients
  

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 cup molasses
  • 2 whole eggs
  • 2 1/2 cup all-purpose flour sifted
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 tsp. ginger
  • 2 1/2 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1 cup hot water

Instructions
 

  • Preheat oven to 350 degrees. In a large mixing bowl, cream shortening with sugar. Add in molasses until fully incorporated. Beat in eggs, adding one at a time.
  • Sift together flour, salt, baking powder, baking soda and spices. Add to creamed mixture alternately with hot water.
  • Pour into prepared muffin tins and bake for 15-20 minutes or until toothpick comes out clean. Let cool and enjoy!
